Prepare shrimp and season
Rinse 10 oz pkg shrimp, then pat very dry. Season with a pinch each of kosher salt and ground pepper.

Grate Parmesan cheese
Finely grate 3/4 ozParmesan cheese, if not pre-grated.

Prepare garlic and rolls
Halve 2 Portuguese rolls horizontally. Halve 1 large garlic clove.

Prepare vegetables
Rinse 5 ozbaby spinach and 4 ozgrape tomatoes. Pat dry if needed.

Gather remaining ingredients and tools
Measure out 3 ozmascarpone, butter, and olive oil. Get out a microplane or grater, rimmed baking sheet (with foil if desired), and medium skillet.
Cooking Steps

Prep shrimp & Parmesan
Rinse 10 oz pkg shrimp, then pat very dry. Season with a pinch each of kosher salt & ground pepper. Finely grate ¾ oz Parmesan, if necessary.

Prep garlic bread
Halve 2 Portuguese rolls horizontally; place, cut side up, on a piece of foil or a rimmed baking sheet. Halve 1 large garlic clove and rub onto cut side of rolls. Drizzle with olive oil. Sprinkle Parmesan on top.

Cook vegetables
Heat 2 teaspoons olive oil in a medium skillet over medium-high. Add 5 oz baby spinach, in large handfuls, and cook, stirring, until just wilted, 1-2 minutes. Transfer to a plate. Melt 1 tablespoon butter in same skillet over medium-high heat. Add 4 oz grape tomatoes and season with salt and pepper. Cook, undisturbed, until tomatoes are blistered and browned in spots, 2-3 minutes.

Cook shrimp
Add shrimp to skillet with tomatoes and cook, stirring occasionally, until shrimp are just curled, pink, and cooked through, 2-3 minutes.

Toast bread & finish
Meanwhile, preheat broiler with a rack in the top position. Broil bread until golden and crisp, 1-3 minutes (watch closely as broilers vary). Add 3 oz mascarpone to skillet, stirring until melted, 1-2 minutes. Stir spinach into skillet. Serve shrimp, tomatoes, and spinach alongside Parmesan-garlic bread.
