Be careful with hot oil; test the temperature with a pinch of batter before frying. For less heat, use fewer jalapeños in the slaw. Microwave tortillas wrapped in a damp paper towel to keep them soft. Let cooked fish rest briefly on a towel-lined plate to absorb excess oil.
