1
Gather all tools and equipment
Get out paper towels, a large pan, and any serving bowls you need.
2
Prepare shrimp
Rinse 10 oz (20 oz for 4 servings) of shrimp under cold water and pat dry with paper towels.
3
Get rice and sauce ready
Take the 4 oz (8 oz for 4 servings) pack of microwavable rice out and massage it in the package to break up grains. Open or have ready the zesty ancho sauce and the mango with juice for quick add-in.

Cooking Steps
1
Prepare the Shrimp
Rinse shrimp under cold water and pat dry with paper towels.
2
Cook the Shrimp
Heat a drizzle of oil in a large pan over medium high heat. Add shrimp and season with salt and pepper. Cook, turning occasionally, until opaque and cooked through, about 3-4 minutes. Turn off heat and transfer to a plate. Wipe out the pan.
3
Prepare the Rice
Massage microwavable rice in the package to break up grains.
4
Cook Mango Rice
Heat a large drizzle of oil in the pan used for shrimp over medium-high heat. Add rice to the pan and season with salt and pepper. Add ¼ cup water (½ cup for 4 servings) and mango with juice; stir to combine. Cook, stirring frequently, until rice is warmed through and liquid has reduced, about 1-2 minutes.
5
Finish Rice and Shrimp
Remove pan from heat; stir in zesty ancho sauce and half the shrimp. Season with salt and pepper to taste.
6
Serve
Divide shrimp and rice between bowls. Top with remaining shrimp and serve.
