Cooking Steps
1
Prepare and cook shrimp
Rinse 10 oz of shrimp under cold water and pat dry with paper towels. Heat a drizzle of cooking oil in a large pan over medium-high heat. Add shrimp and season with kosher salt and black pepper. Cook, turning occasionally, until opaque and cooked through, about 3-4 minutes. Turn off heat and transfer the shrimp to a plate. Wipe out the pan.
2
Cook mango rice
Massage 4 oz of microwavable rice in the package to break up the grains. Heat a large drizzle of cooking oil in the pan used for the shrimp over medium-high heat. Add rice to the pan and season with kosher salt and black pepper. Add 1/4 cup of water and mango with juice; stir to combine. Cook, stirring frequently, until rice is warmed through and liquid has reduced, about 1-2 minutes.
3
Finish and serve
Remove the pan from heat; stir in zesty ancho sauce and half the shrimp. Season with kosher salt and black pepper to taste. Divide shrimp and rice between bowls. Top with remaining shrimp and serve.
