1 whole Pink Lady Apple
7 oz Brie
4 oz Thick-Cut Bacon

Prepare bread and cheese
Halve the 2 ciabatta rolls and scoop out some of the inside, discarding the extra bread. Cut the 7 oz Brie into 6 slices.

Slice apple
Thinly slice the 1 Pink Lady apple.

Get out key tools
Set out a medium skillet and a heavy skillet for panini pressing.

Prep other ingredients and condiments
Open the 4 oz pkg thick-cut bacon, 2 (¼ oz) Dijon mustard, and 1 pkt balsamic vinaigrette. Rinse and dry the 5 oz baby spinach if needed.

Prep ingredients
Halve 2 ciabatta rolls and scoop out the inside (discard extra bread). Thinly slice 1 Pink Lady apple. Cut 7 oz Brie into 6 slices.

Cook bacon
Place 4 oz pkg thick-cut bacon in a medium skillet. Cook over medium heat, stirring occasionally, until crisp, 7-9 minutes. Transfer to a paper towel-lined plate. Reserve bacon fat; wipe out skillet and set aside for step 4.

Assemble panini
Evenly divide 2 (¼ oz) Dijon mustard between cut sides of bread; season with kosher salt & ground pepper. On bottom slices of bread, layer on apples, cooked bacon, and brie. Place remaining bread on top.

Cook panini
Heat ½ teaspoon bacon fat in reserved skillet over medium-low. Place 1 sandwich in the center and cover with a heavy skillet, pushing down to press filling together. Cook until crisped and cheese starts to melt, 3-4 minutes per side. Repeat with remaining sandwich.

Finish salad & serve
Toss 5 oz baby spinach with 1 pkt balsamic vinaigrette and serve alongside bacon and brie panini. Enjoy!
