Slice potatoes into ½-inch-thick wedges.

Peel and cut the onion into ½-inch-thick rounds, keeping the layers intact.

Halve brioche buns
Slice the brioche buns (2 for 2 servings, 4 for 4 servings) in half.

Measure ingredients
Measure out 2 oz (4 oz for 4 servings) of white cheddar cheese and set out crispy fried onions and ground beef (10 oz for 2 servings, 20 oz for 4 servings).

Gather equipment
Get out a baking sheet for potatoes, a large pan for onions and burgers, and a medium dry pan for toasting buns (and bacon, if using).
Cooking Steps

Roast Potatoes
Adjust rack to top position and preheat oven to 450 degrees. Wash and dry produce. Slice 12 oz of potatoes into ½-inch-thick wedges. Toss on a baking sheet with a drizzle of oil, salt, and pepper. Roast on top rack until lightly browned and tender, 20-25 minutes.

Prep
Meanwhile, peel and cut onion into ¼-inch-thick rounds, keeping layers intact. Halve brioche buns.

Griddle Onion
Heat a drizzle of oil in a large pan over medium-high heat. Add onion and cook until tender and browned at the edges, 2-4 minutes per side. Season with salt and pepper. Turn off heat and transfer to a plate. Wipe out the pan.

Cook Burgers
Form 10 oz of ground beef into two patties, each slightly wider than a burger bun. Season generously with salt and pepper. Heat a drizzle of oil in pan over medium-high heat. Add patties and cook to desired doneness, 3-5 minutes per side. In the last 1-2 minutes of cooking, top patties with ¼ cup of white cheddar cheese and cover pan to melt.

Toast Buns
While patties cook, toast brioche buns until golden brown. Spread as much smoky mustard as you like onto cut sides of buns.

Finish & Serve
Fill brioche buns with griddled onion, burger patties, and crispy fried onions. Divide burgers between plates and serve with roasted potato wedges on the side.
