To maximize flavor, briefly sizzle (bloom) the green curry paste in oil before adding other sauce ingredients. To add richness, stir in a bit of butter at the end. If doubling or tripling the recipe, cook protein and veggies in batches. Season rice and curry to taste with lime juice and cilantro just before serving.
