Wash and dry produce
Wash and dry the shallot and cilantro before starting any food prep.

Chop and prep vegetables
Halve, peel, and finely dice shallot. Roughly chop cilantro.

Prepare chicken and cheese
Open the package of chopped chicken breast and drain off any excess liquid. Measure out 1 cup of mozzarella cheese.

Gather remaining ingredients and equipment
Set out the flour tortillas, Fry Seasoning (1 TBSP), BBQ sauce (if included), red pepper crema, kosher salt, black pepper, cooking oil, butter, large pan, paper towels, and a clean work surface.

Prep Ingredients
Wash and dry produce. Halve, peel, and finely dice shallot. Roughly chop cilantro.

Cook Chicken
Open package of chicken and drain off any excess liquid. Heat a large drizzle of oil in a large pan over medium-high heat. Add chicken; season with 1 TBSP Fry Seasoning, salt, and pepper. Cook, stirring occasionally, until browned and cooked through, about 4-6 minutes. Turn off heat, transfer to a plate, and wipe out pan.

Make Quesadillas
Place flour tortillas on a clean work surface. Sprinkle half of each tortilla with 1/4 cup mozzarella cheese. Top with cooked chicken, shallot, BBQ sauce, and half the cilantro. Sprinkle with remaining mozzarella cheese. Fold tortillas in half to create quesadillas.

Cook Quesadillas
Heat 1/2 TBSP butter and a drizzle of oil in the pan used for chicken over medium heat. Add quesadillas and cook until golden brown on one side, about 1-2 minutes. Add another 1/2 TBSP butter and flip; cook until golden brown and cheese melts, 1-2 minutes more. You may need to work in batches, adding more oil and butter for each batch. Transfer to a paper-towel-lined plate.

Finish & Serve
Cut quesadillas into wedges. Divide quesadillas between plates. Drizzle with red pepper crema and garnish with remaining cilantro. Serve.
