Wash and dry produce
Wash and dry all fresh produce including scallions, cucumber, and shredded carrots.

Prepare vegetables and aromatics
Trim and thinly slice scallions, separating the whites from the greens. Peel and grate garlic. Trim and thinly slice cucumber.

Measure out ingredients
Have ready the following: umami ginger sauce, ketchup, Sriracha, sesame seeds (divide in half), rice wine vinegar, shredded carrots, ¼ tsp sugar, and potato buns.

Get out equipment
Set out a large pan for cooking the pork, a large bowl for the salad, and a grater for the garlic. Also have a cutting board and knife ready for slicing vegetables.
Cooking Steps

Prep Produce
Wash and dry produce. Trim and thinly slice scallions, separating whites from greens. Peel and grate garlic. Trim and thinly slice cucumber.

Cook Pork
Heat a drizzle of cooking oil in a large pan over medium-high heat. Add ground pork, scallion whites, garlic, salt, and pepper. Cook, breaking up meat into pieces, until pork is browned and scallion whites are softened, 2-4 minutes.

Add Sauce and Seasonings
Add umami ginger sauce, ketchup, Sriracha, and half the sesame seeds. Cook, stirring, until sauce is thickened and pork is cooked through, 1-2 minutes more. Taste and season with salt and pepper if desired. Remove from heat and cover to keep warm.

Make Cucumber-Carrot Salad
In a large bowl, combine shredded carrots, cucumber, scallion greens, rice wine vinegar, remaining sesame seeds, 1/4 tsp sugar (or 1/2 tsp for 4 servings), and a pinch of salt.

Finish & Serve
Halve and toast potato buns. Fill buns with pork mixture and as much cucumber-carrot salad (draining first) as you like. Divide sloppy joes between plates and serve with any remaining cucumber-carrot salad on the side.
