Make the Mashed Potatoes
Bring a medium pot with 1 tsp. salt and potato chunks covered by water to a boil. Once boiling, cook until fork-tender, 14-18 minutes. Remove from burner. Reserve ½ cup potato cooking water. Drain potatoes in a colander/strainer and return to pot. Add remaining creme fraiche, ¼ tsp. salt, a pinch of pepper, and ¼ cup reserved potato cooking water. Mash until smooth. If too thick, add additional reserved water, 1 Tbsp. at a time, as needed. Cover and set aside to keep warm.
