Cooking Tips

Pat barramundi fillets dry before seasoning and searing for crispier skin. To soften sun-dried tomatoes quickly, soak in warm water for at least 5 minutes before chopping. Adjust the lemon butter sauce's tang by adding more or less lemon juice to taste. For best presentation, serve barramundi on top of the bean and veggie sauté and drizzle basil pesto just before serving.
